Foods can be classified on the basis of their perishability into the following groups: perishable foods the foods which deteriorate (spoil) quickly after harvest or slaughtering are called perishable foods. Generally, perishable foods contain high moisture. It includes vegetables, soft fruits, meat, poultry, fish, etc. Semi-perishable foods contain natural inhibitors to delay spoilage. The category of these food includes root vegetables, honey, etc. The moisture containing these foods ranges from 20 to 70%. Non-perishable foods, the food does not spoil readily contains moisture lesser than 15%. This category of food includes nuts, resins, cereals, etc.
